Vegan Tzatziki Dressing

Lately, I have been experimenting a lot with recipes containing vegan yoghurt, as we have started making our own soy yoghurt (I will share how sometime soon). It is so exciting to cook with yoghurt, and it makes recipes more 'dairy like' if you can say that. I already had much success with my ranch dressing, so now, of course, I had to try tzatziki, a greek yoghurt dip with garlic and cucumber.Continue reading »

Soft Whole Wheat Bread Squares

Why not bake some bread today? These whole wheat bread squares are some of my favorite bread. Even though they are 100% whole wheat and have a rustic, nutty, deep flavor, they are still soft and fluffy (when freshly baked). They fill you up good and are perfect for a satisfying dinner sandwich. And because they are so thin, they are relatively quick to make.Continue reading »

Normally, I like to make complicated food – yes, that's me. But life sometimes is too complicated for complicated food. I think we all know that. SO, this easy vegetable rice dish almost takes care of itself. With the beloved combo of carrots and peas, and whole grain rice to fill up stomachs, this dish is simple and inexpensive enough to make for a crowd of hungry mouths. While not exactly party food, it can be a real life saver on weeknights Continue reading »

Herbed Baked Potato Wedges

These baked potato wedges can easily satisfy your cravings for french fries, and they have only little more than one fourth the calories! Compare the 140 calories for a serving (174 g.) of these baked potatoes with the 543 calories for 174 g. of french fries! And the well balanced herb flavor of these baked potatoes make them even better than french fries (try and see for yourself!). So you get a double advantage!Continue reading »

Fried Eggplant

Do you like eggplant?. If you do, good for you! If you don't, you need to try these lightly fried eggplant slices. I was given two large eggplants by a friend, and being a person who definitely does not like did not like eggplant, I had no clue what to do with them. I tried baked eggplant puree -- no success. I had to find a way to quickly cook the eggplant, as overcooked, mushy brown eggplant is not exactly my cup of tea. So fried eggplant was born. Now you know what to do with all that eggplant!Continue reading »

Here is a savory take on the traditional graham crackers. I would dare to say these homemade crackers are even tenderer than the store-bought ones, and they are 100% whole grain! With only 4 ingredients, they are simple to make and a perfect foundation for experiments – add herbs, garlic, sesame seeds, or anything else you like. These crispy whole-wheat crackers are perfect as a lunchbox snack, evening energy boost, or salty party treat. Go wild!Continue reading »

Healthy Snickers Spread

It's time to pack the sack lunches again. And I'm sure the kids are asking for peanut butter and jelly sandwiches, or perhaps peanut butter and honey sandwiches, or even Nutella, but I think it's time to mix things up a bit. Transform the peanut butter and honey into a healthy chocolate spread, and skip the snickers bar at the same time, for this is – healthy snickers spread!Continue reading »
