Savory Whole Wheat Crackers


     Here is a savory take on the traditional graham crackers. I would dare to say these homemade crackers are even tenderer than the store-bought ones, and they are 100% whole grain! With only 4 ingredients, they are simple to make and a perfect foundation for experiments – add herbs, garlic, sesame seeds, or anything else you like. These crispy whole-wheat crackers are perfect as a lunchbox snack, evening energy boost, or salty party treat. Go wild!


     Whole wheat flour, oil, water, and salt are the only ingredients needed for these crackers. In this post on Savory Graham Pie Crust, I explain how the bran in whole wheat flour helps to make the pastry tender and how you should prepare whole wheat pie crust (same method for crackers). You can experiment with the amount of oil and water you use in the crackers; the ratio of one-to-one is just guiding. More oil and less water makes the crackers richer and tenderer; less oil and more water makes the crackers leaner and harder. The salt on top of the crackers can be omitted, and herbs can be added with the dry ingredients to the dough.
     When the dough is finished, roll it out and place it on an un-greased cookie sheet, or just squish it out with your hands. Sprinkle the dough with the sea salt if you are using that and press it down with your hands. Now, cut the crackers in any shape you want! I prefer to cut them into squares as that is easiest. Bake and enjoy! Make sure to pack the crackers in an airtight container or bag AFTER they are cooled, as you want to keep them dry.

Savory Whole Wheat Crackers

Yields: 42 crackers

Ingredients

2 1/2 c. whole wheat flour; or white and whole wheat combination
1/2 to 1 tsp. salt
1/2 c. oil 
1/2 c. water
sea salt, for sprinkling, optional

Instructions

1. Mix everything briefly.
2. Roll out dough thinly into a square about 14 x 12 in. Sprinkle with sea salt if using and press down with hands. Cut in 2x2 in. squares.
3. Bake at 400° F for 20 to 30 min. or until dry.
4. Store in airtight container when cooled.
