Normally, I like to make complicated food – yes, that's me. But life sometimes is too complicated for complicated food. I think we all know that. SO, this easy vegetable rice dish almost takes care of itself. With the beloved combo of carrots and peas, and whole grain rice to fill up stomachs, this dish is simple and inexpensive enough to make for a crowd of hungry mouths. While not exactly party food, it can be a real life saver on weeknights and does not even need a gravy. It can be served with whatever you have on hand – patties from the freezer, bread from the cupboard, a salad from the fridge, or some seaweed chips from a bag. And there we had dinner again. . . .

Vegetable Rice
Yields: 4 servings
2 carrots, diced 1/3 x 1/3 in.
1 onion, finely chopped
2 cloves garlic, minced 1 c. brown rice 21/2 c. water 1 tsp. salt, or to taste 1 Tbsp. lemon juice 2 Tbsp. nutritional yeast flakes, optional 1/2 c. peas
1. Boil everything except peas with lid until water has
been absorbed.
2. Remove lid, allowing steam to escape for about 5 min.
Add peas and fluff with fork.
3. Serve warm.
