Welcome to today's adventure! Let me take your tongue on a trip to trifle land. Let me caress it with cream, let me delight it with pineapple, and let me challenge it with crunchy cookie crumbs ... Plunge your spoon deep and dive in ... enjoy a powerful pineapple parfait!
As I may have mentioned before, parfaits and trifles are some of my favorite desserts. They rely on fruit for flavor and they are easier to make healthy than for example cakes and cookies. And still, they are so creamy and texturally exciting!
This parfait is a variation of an apple sauce parfait we used to make. It utilizes the Pineapple Sauce I shared yesterday and a creamy vegan topping of your choice. Cookie crumbs are added for extra texture.
For the cream, I recommend using my recipe for Rich Cream Topping which can be found in my free cookbook My 10 Favorite Desserts (sign up in the top right corner of this blog to get it!), but you can also use the Coconut Cream Topping found on this blog or any other topping you like. However, I strongly encourage you to check out the Rich Cream Topping.

Powerful Pineapple Parfaits
Ingredients
Pineapple Sauce or apple sauce
crushed cookies, such as sugar cookies, or granola
Instructions
1. Layer ingredients in order given in individual serving glasses, ending with cream. Sprinkle with crushed cookies for decoration if desired.
2. Serve immediately, as cookies may otherwise become soggy.
