Today, I will share another filling for the Basic Turnovers. It is the Comforting Onion-Potato Filling. The potatoes are complete with pureed soybeans for protein and creaminess.
Some mushrooms, even though not necessary, add extra meatiness. And, of course, the onion is crucial, as it adds that extra depth of flavor, as I also explained in my post 9 Things to Keep in Mind When Cooking Vegan.
This filling is perfect for summer – comforting food packed in petite small hand pies, ready to be devoured in the sun or in the shade. Enjoy!
Turnovers With Comforting Potato Filling
Yields: 24 turnovers
Ingredients
2/3 Basic Recipe for Turnovers
4 onions, chopped
1 can (14 oz.) sliced mushrooms, roughly chopped
2 tsp. soy sauce, for extra flavor, optional
4 c. (1 l.) cooked, diced potatoes
1 c. (2 1/2 dl.) soybeans pureed with 1/2 c. (1 dl.) water
3 tsp. salt
Ingredients
1. Sauté the onions and mushrooms in a little oil till browned. Add soy sauce if using.
2. Stir in remaining ingredients and heat through.
3. Use as a filling for about 24 turnovers.
