This salad is pure summer bliss – it's sweet, it's juicy, and it's melony ... perfect for breakfast, lunch, supper, and dessert ... with or without granola ... with or without juice. Take advantage of the melon season and indulge – it's guiltfree. And if you have your own melon garden, this salad is a must to try.
Basically, dice up as much melon as you desire, preferably several different types, and toss together in a bowl. Add apple juice if you like a very juicy salad. Place the salad on the table with a jar of granola and watch it disappear (don't forget to get your share too)! For dessert, add a dollop of vegan whipped topping, such as Super-Simple Sweet Coconut Cream Topping.

Triple Melon Salad
Yields: 4 meal servings or 8 dessert servings
Total time: 15 min or less
1/4 watermelon, diced
1 cantaloupe, diced
1/3 banana melon or 1 Galia melon, diced
apple juice, optional
vegan whipped topping, optional
1. Toss melons together in bowl. Pour over apple juice if desired.
2. Serve with granola and/or vegan whipped topping if desired. Salad can be stored a few hours in the fridge if needed.
