Summer Salad


     The crispy lettuce, creamy avocado, juicy tomato, and sweet corn pairs perfectly in this salad for a bright summer side. If you want some extra contrast, add some sliced green olives.
     This salad should be served immediately, as the avocado will start browning and the tomatoes will make the salad soggy. But that should be no problem, as this salad is quick to make! It is perfect for a summer garden dinner served with some vegan ranch dressing.

Summer Salad

Yields: 5 servings

Ingredients

8 leaves Chinese cabbage, chopped
1 avocado, diced
2 Roma tomatoes, diced
1/2 c. corn kernels
1/2 c. chopped spring onion


Instructions

1. Toss everything together.
2. Serve immediately, as the avocado will otherwise start browning.
