Easy Potato Salad With Vegetables


     I was debating whether to call this dish easy potato salad, veggie potato salad, or one-pot potato salad. I finally chose Easy Potato Salad With Vegetables. This salad is easy to make because the dressing only requires two secret ingredients (read on to find out which) that are easy to mix together. And then there are the veggies, which take this salad to the next level – a fresh, summery level.
 

     First, peel and boil about 12 medium potatoes. Cut them in half so they'll cook faster (don't cut them too small, though, because then they will fall apart). ...


     While the potatoes are boiling, mix together the dressing: 2/3 c. garlic hummus and 1/3 c. vegan mayonnaise! 


     Cut the veggies: Peel and chop one onion. Take about 4 Roma tomatoes, wash them, cut them in half, scoop out the seeds (save for tomato sauce or discard), and dice. You can also use 1 large red bell pepper instead of the tomatoes. Wash and dice 1/2 cucumber.


     When the potatoes are cooked, dice them. You will have 4 to 5 cups. (Here is a secret if you are in a hurry to cool the hot potatoes down: Hold the pot under running tap water and let the water spill over the edge of the pot till the water is no longer warm. Pour the water out and fill the pot with fresh water. Let the potatoes sit in the water while you start dicing some of them.)


         Now, pour everything back in the pot ... Together with 2 tsp. salt, a dash of cayenne, and 1/2 Tbsp. lemon juice. ...


     ... and carefully FOLD everything together (do not just stir around, mashing the potatoes!).


     Here you go!

Ingredients

4 Roma tomatoes, halved, center scooped out, and diced
1/2 cucumber, diced
1 onion, chopped
2/3 c. garlic hummus
1/3 c. vegan mayonnaise
1 to 2 tsp. salt
dash cayenne, optional
1/2 Tbsp. lemon juice

Instructions

1. Carefully fold all ingredients together.
2. Serve cold.
