BBQ Balls (for Father's Day!)

 
     It's soon Father's Day, which means good food, summer, and grilling season. So I though I would share with you these barbecue balls (which have never seen a grill, lol!). They may seem difficult to make because they require two steps, but they are actually not. And the best thing is that the gluten puffs can be made ahead of time and frozen. On the big day, just mix and heat the BBQ Balls!
     Making the gluten puffs requires gluten flour, but once you have that, they are simple to mix and cook. Making the dough is as easy as a dump and a stir, and the cooking takes care of itself. Make sure to roll the balls tight, as they will expand when cooking. If the dough sticks to your hands, just wet them with a little water. Some of the balls will fall apart while cooking, but the recipe for gluten puffs makes a larger batch than you'll need for the BBQ balls, so leftovers and pieces can be frozen for use in dishes that normally require meat (or for more BBQ balls ;).

BBQ Balls

Yields: 4 c.

Ingredients

4 c. Gluten Puffs
 (see below)
½ c. brine from green olives

¼ c. water

2 Tbsp. tomato sauce

2 tsp. paprika

2 tsp. onion powder

1 tsp. garlic powder

1 tsp. brown sugar

2 cloves garlic, minced/crushed

Instructions

1. Cook everything except garlic in pan until slightly thickened. Add garlic.
2. Serve warm.
 

Gluten Puffs

Ingredients

Dough:
2 c. quick oats

4 c. gluten flour

4 Tbsp. dried parsley

2 tsp. salt

2 tsp. paprika
dash 
cayenne, optional

2 ½ to 2 ¾ c. water
2 Tbsp. soy sauce

Broth:

4 c. water

4 cloves garlic, crushed

2 tsp. paprika

2 Tbsp. soy sauce

parsley, optional

Instructions

1. Mix ingredients for broth and bring to a boil.
2. For dough, mix dry ingredients in bowl. Add water and soy sauce and stir until well blended. You may use your hands to mix.
3. Take bits of dough and roll into balls. Drop carefully into boiling broth. Simmer about 30 min. Drain and cool.
4. May be frozen.
