Turnovers With Gooey Pb-and-Banana Filling


     I saved the best for last! Here is the recipe for my favorite filling for Soft Dinner Turnovers. Is is a sweet, creamy, rich, flavorful filling with baked bananas, brown sugar, peanut butter, and cinnamon. It is so yummy that you will only want to make this filling for dinner. You must try it – promise me.
     If you have problems with peanuts, you can use almond butter instead of the peanut butter. You may also omit the cinnamon if you wish, but it adds to the depth of flavor. However, do not use white sugar instead of brown sugar – it would take away too much of the good flavor; if you must substitute, substitute with maple syrup or honey or some other sweetener that has some of its natural flavor left. If you want to avoid sugar altogether and go a more natural way, use pureed fresh dates instead. Finally, about the bananas – don't worry; they are not all brown and slimy; they are warm, sweet, golden, and creamy – they are delicious, so do not skip them!
     This recipe is for only one turnover, so you can easily multiply the filling according to how many turnovers you want to make. I like to make turnovers with this filling after I have made the savory ones, so that I can use whatever dough I have left. (The amount of turnovers the filling makes, inevitably varies with the size of the turnovers and the amount of filling you put in each– in other words, it depends on you. And perhaps I should mention that the number of turnovers I noted in the previous two recipes for fillings are just estimates. That I why I made this recipe!)
     WARNING: Make at least two turnovers with this filling per person. But beware, this filling is addictive. It might end up being the only one you use!

Turnovers With Gooey Pb-and-Banana Filling

Yields: 1 turnover (recipe is easy to multiply)

Ingredients (per turnover):

2 tsp. peanut butter
1 tsp. brown sugar or 2 tsp. date puree
1/4 banana, sliced
1 pinch cinnamon (1/4 tsp. for 8 turnovers)

Instructions

1. Spread peanut butter in center of each dough square. Sprinkle with sugar. Place sliced banana on top and sprinkle with cinnamon.
2. Follow directions for Basic Turnovers.
